A clic French apple tart is little more than apples and pastry, but such simplicity means that imperfections like tough or mushy apples, unbalanced flavor, and sodden crust are hard to hide. In our recipe a quick and buttery pat-in-pan dough bakes to a shortbread-like texture that gives the tart a sturdy base. For intense fruit flavor, we pack the tart with a whopping 5 pounds of Golden Delicious apples. We cook half into a concentrated puree, which is made more luxurious with butter and apricot preserves, and we slice and parcook the remaining apples and use them to adorn the top with concentric circles. A thin coat of preserves and a final run under the broiler provide an attractively caramelized finish and a distinctively European flair.

Salted Caramel Chocolate Tart.
The perfect end to any special meal? Salted Caramel Chocolate Tart.I’m kind of late to the party, but I made this for my husband. And it’s a new favorite. He said that no other dessert, cake or tart could compete with this. But is there some way to the base gluten? My mom and sister have celiac , and I would love to it for them. To the caramel sauce, add the sugar to a heavy based saucepan and let it melt down on a medium heat, swirling (never stirring) until it begins to change colour. Once the sugar has melted and ed an amber colour, pour in the cream and add the butter. It will sizzle and sputter but keep stirring and it will come together. Allow to cool. Spread the cooled caramel sauce into the base of the pastry case then prepare the ganache filling by placing the rest of the ingrents in a heatproof bowl over a pan of simmering water. Mix until smooth and then pour on top of the caramel, sprinkle some sea salt on the top then allow to set at room temperature for 1 hour before serving.
By trading the traditional rolled pastry and pastry cream filling for easier, faster alternatives, we produced a fresh fruit tart that is as appealing to as it is to eat. Stirring melted butter into the dry ingrents yielded a malleable dough that could be pressed into the pan; for extra flavor, we browned the butter first and added back the water that had cooked off so that there was enough moisture for the flour to form gluten (the protein network that would give the dough structure). A mix of mascarpone cheese, melted white baking chips, and lime juice and zest gave us a quick-to- filling that was lush and creamy but also full-bod and firm enough to slice cleanly. Arranging thin-sliced peaches in lines radiating from the center of the tart to its outer edge created cutting guides between which we artfully arranged a mix of berries. These guides ensured that we could slice the tart into neat portions without marring the arrangement of the fruit. A glaze of apricot preserves and lime juice brightened the fruit and gave the tart a polished, professional look.
Adjusting Cheesecake Recipes for Different Pan Sizes.
I have a recipe for a lemon marble cheesecake that I am making for Easter Dinner. I have several question for you. I would like to this in a larger size.Start with the number of eggs in the recipe. In the above example of going from a 9 ½" pan to a 12" pan, if the original recipe s for 4 eggs, then the scaled recipe will need 6.4 eggs. Now you have a problem, the 0.4 of an egg. The easiest thing to do will be to use 6 eggs, and scale everything by 1.5 instead of 1.6. Scale the rest of the ingrents accordingly and proceed. I have a recipe for a lemon marble cheesecake that I am making for Easter Dinner. I have several question for you. I would like to this in a larger size pan but have been unable to find the volumes for any cheesecake pans. Do you have any idea of the volumes on say a 9 1/2 inch, 10 inch and 12 inch springform pans? Also after adjusting the recipe quantities are there any other considerations I might need to take besides increasing the baking time? According to Corriher, in her new book Bake Wise: The s and Whys of Successful Baking, springform pans may not actually measure the same diameter as they are labeled. The Food 's Companion does give the volume for a 9 ½" x 2 ½" springform as 10 cups, and a 10 ½" x 2 ½" springform as 12 cups. If you have the pans on hand, you could just fill them with water using a measuring cup and see much it takes, but since springform pans leak, you need to line them with something to keep the water in. To do that, just open kitchen garbage bag and put it into the pan, the same as if you were lining a pail. Let the excess drape around the outside, and then fill the bag inside the pan with water until it comes close to the top of the pan. The water will push the excess plastic out to the edges of the pan, so your measurement will be pretty close. It is probably best to do this in the sink to avoid a mess. Just one more note, though. If you are scaling by volume, and the recipe s for a crumb crust on the bottom of the pan, scale the ingrents for the crust by the ratio of the diameters, as above. If you don't, the crust will be too thick.
Hawaiian Chicken Sheet Pan Supper.
This Hawaiian Chicken Sheet Pan Supper is made with chunks of flavourful marinated chicken. Roasted vegetables and roasted pineapple. A simple and quick dinner that everyone will love? I love skewers but honestly.I love skewers but honestly, they’re a lot of work. I don’t like putting everything onto the skewers, and I especially find them hard to BBQ. That’s why I love sheet pan recipes like this one so much, because it’s everything I love about skewers but without all the work. Put everything you would use for skewers onto a sheet pan, and let your oven do all the work. If you have too many vegetables to fit on your sheet pan, just add them to another pan and roast it at the same time. You may just want to shift the pans around in the oven a couple of times to ensure even cooking.
